Black Bean Soup….Can yah dig?

I scream you scream we all (meaning my twin sister and I) scream for soup! I don’t know about you but I love me some soup. Soup is great when you are on a budget or need to sneak some extra veggies to make sure your family is eating their balanced nutrients. The aroma of soup fills my home and seems to put everyone into a better mood, especially when I make my Black Bean Soup.

My family loves this recipe! If my husband feels like he hasn’t been eating all that well, he suggests this soup to help “balance” him out. Fiber, Fiber, Fiber! My daughter loves it with a little garnish of cheddar gold fish crackers or sharp cheddar cheese to bring some extra texture.  I eat this for my lunch with my chicken, fish or steak with a dollop of Greek yogurt; tons of cilantro and of course some tapatio! We eat tapatio by the gallons in this house and it goes on everything and I mean EVERYTHING. It is my secret weapon to heat up my body to burn more fat!! Throw in some brown rice for a balanced complete protein, carb, and fat meal. This is another great recipe that the longer it sits, the flavor gets better. Ingredients:  Makes 8 servings-8 cups

1 whole Red Onion

1 tsp Olive Oil or Cocunut Oil

3 Bell Pepper (make it purty & colorful)

1 tsp or 1 tbsp of minced garlic ( I like a lot of garlic)

1-32oz Chicken Stock (I use the kitchen basic brand. It’s alittle pricey but way more flavor)

2- 15oz can Low Sodium Black Beans

1- 14.5 Fire Roasted Diced Tomatoes

3 tbsp Diced Green Chili Peppers

2 tbsp Cumin

1 tbsp Coriander

Salt & Pepper

Plug in your crockpot and get that puppy warm. In the mean, heat your evoo in your frying pan on your stovetop. Cut your red onion and bell peppers into small bite size pieces. Set bell pepper aside. Saute your red onion and minced garlic into the frying pan until soft. Transfer the onion and garlic into your crockpot. Add all remaining ingredients drained black beans, broth, fire roasted tomatoes (do not drain fire roasted tomatoes) bell peppers, green chilies and spices. Stir and let sit for 3-4 hours. Enjoy.
